About Our Chocolate
What percentage of cacao is in your chocolate?
It's 56.4% ā and here's why that number tells you almost nothing about flavour.
The depth of cacao taste comes from how the beans are roasted, not how much cacao is in the bar. Belgian couverture is roasted whole-bean in the husk, unlocking flavour compounds that a higher percentage bar simply can't replicate. So when someone reaches for a 70% bar, they're chasing a number. When they taste ours, they're tasting craft.
How much cocoa butter is in your chocolate?
Our Belgian couverture contains 36.6% cocoa butter ā and that's the secret behind its signature silky melt.
Cocoa butter and cocoa solids do two very different jobs. The cocoa solids (also called fat-free cocoa or dry cocoa) carry the deep, roasted chocolate flavour ā the bitter, intense cacao notes. The cocoa butter is responsible for texture: that smooth, slow melt that coats the palate and releases all those flavour compounds beautifully. Together they make up the total cacao percentage. A chocolate with high cocoa solids but low cocoa butter can taste intense but feel dry and sharp. Ours has both in balance ā which is why it melts the way it does.

What are your chocolate delivery times in Australia?
We dispatch chocolate orders within 3 to 5 business days after payment, depending on stock availability.
Delivery times vary by location and start once Australia Post receives your parcel. Transit times depend on Australia Post services and regional factors.
Tip: Dispatch time is separate from delivery time. Please order early if you need your chocolate by a specific date.

Do you offer Australia-wide chocolate shipping, including regional areas?
Yes, we ship across Australia using Australia Post.
Though located in Regional NSW, outside the Express Post next-day network, we use Express Post to reduce delivery times and protect the quality of your chocolate during transit.

How do you protect chocolates from heat during shipping?
We use heat-safe packaging including thermally lined wraps and food-grade ice packs to maintain chocolate quality.
Orders ship Monday to Wednesday to avoid weekend delays.
What allergens are in your chocolates?
Allergen information varies by product and seasonal specials.
